Hungarian Goulash

1 1/2 tablespoons olive oil

1 2-pound sirloin roast, trimmed and cut into 1 1/2-inch cubes

2 cups thinly sliced onion (about 1 large onion)

1 cup thinly sliced green bell pepper (about 1 medium pepper)

1 teaspoon minced garlic (about 2 medium cloves)

1 14 1/2-oz. can diced tomatoes

1 14 1/2-oz. can beef broth

1 tablespoon paprika

1 teaspoon salt

1/4 teaspoon black pepper

Hot egg noodles

Heat oil in a Dutch oven over medium-high heat. Add beef cubes and brown on all sides. Add onion and bell pepper and cook about 5 minutes.

Add garlic and cook 1 minute. Add tomatoes, broth, paprika, salt, and pepper, stir well to combine, and bring to a boil. Reduce heat, cover, and simmer about 2 hours, stirring occasionally, until beef is fork-tender.

Serve over hot egg noodles.

Makes 6 servings
